Awesome Stir-Fry Dinner

My fiancee made a great meal last night for dinner. It was a stir-fry with wild rice, tons of veggies, and chickpea gluten puffs. She made the chickpea gluten puffs from the Veganomicon recipe for chickpea cutlets.

The chickpea gluten puffs were so good!

I love wild rice. It's totally worth the $7/pound and long cook time (about an hour). Have you ever had wild rice? If not, I suggest trying it. You can find it in the bulk section at Whole Foods and probably at your local health food store.

I love wild rice! It IS worth the money and cooking time.

I've never had chickpea gluten puffs (or seen them either). Are they similar in flavor or texture to anything else?

I had a sweet potato, black bean and spinach quesadilla last night. I've already blogged about it though, didn't think my readers wanted to hear about a repeat......

Yea, wild rice is amazing. It's my favorite rice.

The consistency is mostly wheat gluten. I don't really know what else it tastes like. It's really good, though.

Your dinner looks good, I like your idea to add the chickpea puffs to a stir-fry.

I love wild rice mixed with brown rice and then made into a casserole of some sort.

We had a potato gratin and panfried tempeh I marinated in shoyu, hot sauce, balsamic vinegar, olive oil, ginger and cumin. Very succulent, I loved it. Now back to some reading for my economics class... :-)

Veggie: Thanks. My fiancee gets the credit for the dinner idea. And, that casserole sounds really good. I love rice. I'm about to have leftovers for lunch.

Anke: That's sounds really good. Eating that sounds much more enjoyable that economics. I took a year of econ...yuck. :)

chickpea gluten puffs... love the name! I need to eat wild rice more often, just bummed that it takes awhile.

Last night was leftovers for us... more colcannon and sauteed apples. Probably still enough for tonight too!

I blame my incredible laziness/lack of time. Usually I skip meals (naughty naughty) but I am trying to increase my food variety (and quantity >.<)
I'd like to try wild rice but am skeptical about the flavour
